COOKIES!

COOKIES!
you have to say that like cookie monster ok?

I woke up yesterday morning composing a shopping list in my head to make cookies. I am still not sure if I had decided the night before to bake or if I had a dream about it but I woke up ready to go. I even know which cookies I wanted to make.

I am going to share this recipe for two reasons
1. they are super easy and fast to mix up
2. they make a ginormous amount

My recipe ,which I think I ripped out of a free mailing for Robin Hood flour many years ago, says it takes 8 min to prep .
Because they spread out very thin you use a small amount of batter it makes about 40 (or more if you make them smaller than my greedy house likes them) cookies from one batch
The only downside is you can't freeze them, though it says they can be kept in a covered container for a few weeks. I have never tested this though because my family goes through them in a few days.

Only five ingredients

They make a nice crisp and light cookie

LACY OATMEAL CRISPS
½ cup margarine
2/3 cup packed brown sugar
½ cup corn syrup
1 cup oats
¾ cup flour
Melt margarine, brown sugar and corn syrup together in a medium saucepan. Bring to a boil then remove from heat
Add oats and flour, stirring until smooth.
Line baking sheets with parchment paper or greased foil. Drop mixture by 1 tsp leave room for spreading ( they spead A LOT )
Bake at 375F for 5 to 7 minutes until golden.
Cool until set before removing from baking sheet.

They go really quickly from golden to burnt so check them at the earliest time, they are still soft and will get crispy as they cool
